Carrot Miso Ginger Dressing

I've had a few iterations of this dressing combination at restaurants and have been itching to make my own. So with Peachy Keen Nutrition's food of the month being carrots, I decided it was time.


This dressing is an excellent way to get in some raw veggies. It's also thoughtfully created to obtain maximum nutritional benefits from its ingredients. Carrots are a great source of vitamin A/beta-carotene and the fat in the olive oil helps the body to absorb this fat soluble nutrient.


The Carrot Miso Ginger Dressing is zesty, bright, fresh and aromatic. I think you're going to love it.

Ingredients:

  • 1 cup chopped raw carrots

  • 1 tablespoon chopped fresh ginger

  • 1 tablespoon olive oil

  • 1 tablespoon apple cider vinegar

  • 1/4 cup water

  • 1 teaspoon red miso paste


Instructions:

  • Combine all ingredients in high power blender

  • Blend until smooth!


Notes:

  • Storage: keep in the refrigerator for up to 4 days for best freshness

  • Miso paste: if you can't find red miso paste, any miso paste will do!
